Mama Lil's Pickled Pepper and Bacon Carbonara
This rich and flavorful pasta dish is perfect for a special occasion or a comforting dinner. The tangy pickled peppers and crispy bacon add a unique twist to the classic carbonara.
Ingredients:
- 1 pound spaghetti
- 8 slices cooked bacon, chopped
- 1/2 cup Mama Lil's Pickled Peppers, sliced
- 3 egg yolks
- 1/2 cup grated Parmesan cheese
- 1/4 cup heavy cream
- Salt and black pepper to taste
Instructions:
- Cook the spaghetti according to package instructions. Reserve 1 cup of the pasta water.
- In a large skillet, cook the chopped bacon until crispy. Remove the bacon from the pan and set aside.
- In the same skillet, sauté the sliced Mama Lil's Pickled Peppers for 2-3 minutes, or until they are slightly softened.
- In a small bowl, whisk together the egg yolks, grated Parmesan cheese, heavy cream, salt, and black pepper.
- Add the cooked spaghetti and reserved pasta water to the skillet with the pickled peppers. Toss to combine.
- Remove the skillet from the heat and add the egg yolk mixture. Toss to combine.
- Return the skillet to low heat and cook for 1-2 minutes, or until the sauce is thickened and creamy.
- Stir in the chopped bacon and serve the carbonara hot with additional grated Parmesan cheese.
