Mama Lil's Pickled Pepper and Beef Stir-Fry
This spicy and flavorful beef stir-fry is loaded with colorful veggies and Mama Lil's Pickled Peppers, making for a healthy and delicious dinner.
Ingredients:
- 1 lb. flank steak, sliced into thin strips
- 2 tbsp. soy sauce
- 1 tbsp. cornstarch
- 1 tbsp. vegetable oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 1/4 cup Mama Lil's Pickled Peppers, sliced
- 2 cloves garlic, minced
- Salt and pepper to taste
- Cooked rice, for serving
Instructions:
- In a small bowl, whisk together the soy sauce and cornstarch.
- Add the sliced beef to the bowl and toss to coat it in the soy sauce mixture.
- In a large wok or skillet, heat the vegetable oil over high heat.
- Add the beef to the skillet and stir-fry for 2-3 minutes, or until it is browned and cooked through. Remove the beef from the skillet and set it aside.
- Add the sliced bell peppers, onion, Mama Lil's Pickled Peppers, and garlic to the skillet, and stir-fry for 2-3 minutes, or until the veggies are tender-crisp.
- Return the beef to the skillet and stir to combine it with the veggies.
- Season with salt and pepper to taste.
- Serve the stir-fry hot over cooked rice.
