Mama Lil's Pickled Pepper and Corn Salad

This simple and refreshing salad is a perfect side dish for summer barbecues and picnics. The pickled peppers add a tangy and slightly spicy kick to the sweet corn. 

Ingredients: 

  • 4 cups cooked corn kernels (fresh or frozen) 
  • 1/2 cup Mama Lil's Pickled Peppers, sliced 
  • 1/4 cup red onion, finely chopped 
  • 1/4 cup fresh cilantro, chopped 
  • 1 lime, juiced 
  • 2 tablespoons olive oil 
  • Salt and black pepper to taste 

Instructions: 

  1. In a large bowl, combine the cooked corn kernels, sliced Mama Lil's Pickled Peppers, finely chopped red onion, and chopped cilantro. 
  2. In a small bowl, whisk together the lime juice and olive oil. Pour the dressing over the corn mixture and toss to combine. 
  3. Season the salad with salt and black pepper to taste. 
  4. Chill the salad for at least 30 minutes before serving to allow the flavors to meld together.
