Mama Lil's Pickled Pepper and Corn Salad
This simple and refreshing salad is a perfect side dish for summer barbecues and picnics. The pickled peppers add a tangy and slightly spicy kick to the sweet corn.
Ingredients:
- 4 cups cooked corn kernels (fresh or frozen)
- 1/2 cup Mama Lil's Pickled Peppers, sliced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- 2 tablespoons olive oil
- Salt and black pepper to taste
Instructions:
- In a large bowl, combine the cooked corn kernels, sliced Mama Lil's Pickled Peppers, finely chopped red onion, and chopped cilantro.
- In a small bowl, whisk together the lime juice and olive oil. Pour the dressing over the corn mixture and toss to combine.
- Season the salad with salt and black pepper to taste.
