Mama Lil's Pickled Pepper and Goat Cheese Stuffed Button Mushrooms
These stuffed mushrooms are a flavorful and elegant appetizer. The combination of pickled peppers and creamy goat cheese is sure to impress your guests.
Ingredients:
- 12 large button mushrooms
- 1/4 cup goat cheese
- 1/4 cup Mama Lil's pickled peppers, diced
- 2 tablespoons chopped fresh parsley
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
- Preheat the oven to 375°F.
- Remove the stems from the mushrooms and set them aside.
- In a mixing bowl, combine the goat cheese, diced pickled peppers, chopped parsley, olive oil, salt, and pepper.
- Stuff each mushroom cap with the goat cheese mixture.
- Chop the mushroom stems and mix them into the remaining goat cheese mixture.
- Place the stuffed mushroom caps on a baking sheet and spoon the remaining goat cheese mixture on top.
