Mama Lil's Pickled Pepper and Grilled Chicken Sandwich

This hearty and flavorful sandwich is perfect for a quick and easy lunch or dinner. The tangy pickled peppers pair perfectly with the juicy grilled chicken. 

Ingredients: 

  • 2 boneless, skinless chicken breasts 
  • 1/2 cup Mama Lil's Pickled Peppers, sliced 
  • 2 slices cheddar cheese 
  • 2 whole-grain sandwich buns 
  • 2 tablespoons mayonnaise 
  • 2 tablespoons Mama Lil's Peppalilli Mustard or mustard of choice
  • Salt and black pepper to taste 

Instructions: 

  1. Preheat the grill to medium-high heat. 
  2. Season the chicken breasts with salt and black pepper to taste. 
  3. Grill the chicken breasts for 6-7 minutes on each side, or until cooked through. 
  4. Top each chicken breast with a slice of cheddar cheese and continue to grill for 1-2 minutes, or until the cheese is melted. 
  5. Toast the whole-grain sandwich buns. 
  6. Spread mayonnaise and Dijon mustard on each side of the buns. 
  7. Place the grilled chicken breasts on the bottom half of the buns. 
  8. Top the chicken with sliced Mama Lil's Pickled Peppers. 
  9. Close the sandwich with the top half of the bun. 
  10. Serve the sandwich hot with a side salad or sweet potato fries.
