Mama Lil's Pickled Pepper and Smoked Gouda Puffs

These puffs are a cheesy and delicious appetizer that's perfect for any occasion. 


  • 1 sheet puff pastry, thawed 
  • 1/4 cup Mama Lil's pickled peppers, diced 
  • 4 ounces smoked gouda cheese, grated 
  • 1 tablespoon chopped fresh thyme 
  • 1 egg, beaten 
  • Salt and pepper to taste 


  1. Preheat the oven to 400°F. 
  2. On a lightly floured surface, roll out the puff pastry to 1/8 inch thickness. 
  3. Cut the puff pastry into 2-inch squares. 
  4. In a mixing bowl, combine the diced pickled peppers, grated smoked gouda cheese, chopped thyme, salt, and pepper. 
  5. Spoon a small amount of the filling onto the center of each puff pastry square. 
  6. Brush the edges of the pastry with the beaten egg. 
  7. Fold the pastry over to form a triangle and press the edges to seal. 
  8. Place the puff pastries on a baking sheet and brush with the remaining egg. 
  9. Bake for 15-18 minutes, until golden brown and puffed. 
  10. Serve immediately.
