Mama Lil's Pickled Pepper and Spinach Stuffed Chicken

Ingredients:
- 4 boneless, skinless chicken breasts
- 1/2 cup Mama Lil's Pickled Peppers, sliced
- 1/2 cup chopped fresh spinach
- 1/2 cup ricotta cheese
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon garlic powder
- Salt and black pepper to taste
- 1 tablespoon olive oil
Instructions:
- Preheat the oven to 375°F.
- In a small bowl, combine the sliced Mama Lil's Pickled Peppers, chopped spinach, ricotta cheese, grated Parmesan cheese, garlic powder, salt, and black pepper.
- Cut a pocket into each chicken breast, being careful not to cut all the way through.
- Stuff each chicken breast with the spinach and cheese mixture.
- Heat the olive oil in a large oven-safe skillet over medium-high heat.
- Add the stuffed chicken breasts to the skillet and cook for 3-4 minutes on each side, or until they are browned.
- Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken is cooked through.
- Serve the stuffed chicken hot with a side salad or roasted vegetables.
