Mama Lil's Pickled Pepper and Spinach Stuffed Chicken

This impressive and flavorful chicken dish is perfect for a dinner party or a special occasion. The tangy pickled peppers and creamy spinach filling take this chicken to the next level. 


  • 4 boneless, skinless chicken breasts 
  • 1/2 cup Mama Lil's Pickled Peppers, sliced 
  • 1/2 cup chopped fresh spinach 
  • 1/2 cup ricotta cheese 
  • 1/4 cup grated Parmesan cheese 
  • 1/4 teaspoon garlic powder 
  • Salt and black pepper to taste 
  • 1 tablespoon olive oil 


  1. Preheat the oven to 375°F. 
  2. In a small bowl, combine the sliced Mama Lil's Pickled Peppers, chopped spinach, ricotta cheese, grated Parmesan cheese, garlic powder, salt, and black pepper. 
  3. Cut a pocket into each chicken breast, being careful not to cut all the way through. 
  4. Stuff each chicken breast with the spinach and cheese mixture. 
  5. Heat the olive oil in a large oven-safe skillet over medium-high heat. 
  6. Add the stuffed chicken breasts to the skillet and cook for 3-4 minutes on each side, or until they are browned. 
  7. Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken is cooked through. 
  8. Serve the stuffed chicken hot with a side salad or roasted vegetables.
