Mama Lil's Pickled Pepper Beef Stir-Fry
This Mama Lil's Pickled Pepper Beef Stir-Fry is a quick and easy dinner that's perfect for busy weeknights. Tender strips of beef are stir-fried with colorful vegetables, then tossed with a spicy, tangy sauce made with Mama Lil's Pickled Peppers.
Ingredients:
- 1 lb sirloin steak, sliced thinly
- 2 tbsp cornstarch
- 2 tbsp vegetable oil
- 1 red bell pepper, sliced thinly
- 1 yellow bell pepper, sliced thinly
- 1 onion, sliced thinly
- 1 cup broccoli (optional)
- 3 garlic cloves, minced
- 1 tbsp grated ginger
- 1/4 cup Mama Lil's Pickled Peppers, chopped
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp honey
- Salt and pepper
2 cups cooked rice, for serving
Instructions:
- In a large bowl, season the beef strips with salt, pepper, and cornstarch. Toss to coat.
- In a large wok or skillet, heat the vegetable oil over high heat. When the oil is hot, add the beef strips and stir-fry for 2-3 minutes or until browned. Remove the beef from the pan and set it aside.
- In the same pan, add the sliced bell peppers, onion, garlic, and ginger. Stir-fry for 2-3 minutes or until the vegetables are tender-crisp.
- Add the Mama Lil's Pickled Peppers, soy sauce, rice vinegar, honey, and cooked beef back into the pan. Toss everything together to combine and let it cook for an additional minute.
- Serve the stir-fry over a bed of cooked rice.
