Mama Lil's Vegan Pickled Pepper and Mushroom Fajitas
These vegan fajitas are packed with flavor from Mama Lil's Pickled Peppers and sautéed mushrooms. Serve with fresh tortillas and guacamole for a delicious meal.
Ingredients:
- 2 tbsp olive oil
- 1 onion, sliced
- 2 bell peppers, sliced
- 8 oz mushrooms, sliced
- 1/2 cup Mama Lil's Pickled Peppers, drained
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper
- Tortillas, for serving
- Guacamole, for serving
Instructions:
- Heat the olive oil in a large skillet over medium-high heat. Add the onion and bell peppers and cook until softened, about 5 minutes.
- Add the mushrooms to the skillet and cook for an additional 5 minutes.
- Stir in the Mama Lil's Pickled Peppers, cumin, chili powder, salt, and pepper. Cook for another 2-3 minutes, until heated through.
- Serve the fajita mixture with warm tortillas and guacamole.
