Mama Lil's Spicy Pickled Pepper Peanut Noodles

These vegan noodles are packed with flavor, thanks to the spicy kick from Mama Lil's Pickled Peppers and the creamy richness of the peanut sauce. 


  • 8 oz soba noodles 
  • 1/4 cup creamy peanut butter 
  • 2 tbsp soy sauce 
  • 1 tbsp rice vinegar 
  • 1 tbsp maple syrup 
  • 1 garlic clove, minced 
  • 1/2 tsp grated ginger 
  • 1/4 cup water 
  • 1/4 cup Mama Lil's Pickled Peppers in oil or Sweet Hot Peppas in brine, chopped 
  • 2 green onions, sliced 
  • 2 tbsp chopped roasted peanuts 


  1. Cook the soba noodles according to package instructions. Drain and set aside. 
  2. In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, maple syrup, garlic, ginger, and water until smooth. 
  3. In a large bowl, toss the cooked noodles with the peanut sauce, Mama Lil's Pickled Peppers, and green onions until well coated. 
  4. Divide the noodle mixture among serving bowls and sprinkle with chopped peanuts.
