Mama Lil's Creamy Vegan Pickled Pepper Pasta
A deliciously rich and tangy vegan pasta dish that's perfect for a cozy dinner.
Ingredients:
- 8 oz pasta
- 1/2 cup raw cashews
- 1/2 cup water
- 1/4 cup Mama Lil's Pickled Peppers, drained
- 2 tbsp nutritional yeast
- 1 tbsp lemon juice
- 1 tbsp Olive Oil
- Salt and pepper, to taste
Instructions:
- Cook the pasta according to package directions.
- In a blender, combine the cashews, water, pickled peppers, nutritional yeast, lemon juice, and olive oil. Blend until smooth and creamy.
- Drain the pasta and return it to the pot. Pour the sauce over the pasta and stir to combine.
- Season with salt and pepper to taste, and serve hot.
