Mama Lil's Pickled Pepper and Beef Stir-Fry

This spicy and flavorful beef stir-fry is loaded with colorful veggies and Mama Lil's Pickled Peppers, making for a healthy and delicious dinner. 

Ingredients: 

  • 1 lb. flank steak, sliced into thin strips 
  • 2 tbsp. soy sauce 
  • 1 tbsp. cornstarch 
  • 1 tbsp. vegetable oil 
  • 1 red bell pepper, sliced 
  • 1 yellow bell pepper, sliced 
  • 1 green bell pepper, sliced 
  • 1 onion, sliced 
  • 1/4 cup Mama Lil's Pickled Peppers, sliced 
  • 2 cloves garlic, minced 
  • Salt and pepper to taste 
  • Cooked rice, for serving 

Instructions: 

  1. In a small bowl, whisk together the soy sauce and cornstarch. 
  2. Add the sliced beef to the bowl and toss to coat it in the soy sauce mixture. 
  3. In a large wok or skillet, heat the vegetable oil over high heat. 
  4. Add the beef to the skillet and stir-fry for 2-3 minutes, or until it is browned and cooked through. Remove the beef from the skillet and set it aside. 
  5. Add the sliced bell peppers, onion, Mama Lil's Pickled Peppers, and garlic to the skillet, and stir-fry for 2-3 minutes, or until the veggies are tender-crisp. 
  6. Return the beef to the skillet and stir to combine it with the veggies. 
  7. Season with salt and pepper to taste. 
  8. Serve the stir-fry hot over cooked rice.
