Mama Lil's Pickled Pepper and Caramelized Onion Tart
This tart features a delicious combination of sweet caramelized onions and tangy Mama Lil's Pickled Peppers, all baked in a buttery crust.
Ingredients:
- 1 refrigerated pie crust
- 2-4 tablespoons butter
- 2 large onions, thinly sliced
- 1/2 cup Mama Lil's Pickled Peppers, sliced
- 1/4 teaspoon dried thyme
- Salt and pepper to taste
- 1/2 cup crumbled feta cheese
- 2 tablespoons chopped fresh parsley
Instructions:
- Preheat the oven to 375°F.
- Unroll the pie crust and press it into a 9-inch tart pan, trimming off any excess dough.
- Melt the butter in a large skillet over medium heat.
- Add the onions to the skillet and cook, stirring occasionally, for 20-25 minutes, or until they are caramelized.
- Add the Mama Lil's Pickled Peppers to the skillet, and cook for an additional 2-3 minutes, until the peppers are softened.
- Season the onion and pepper mixture with thyme, salt, and pepper to taste.
- Spread the mixture evenly over the bottom of the tart crust.
- Sprinkle the crumbled feta cheese over the onion and pepper mixture.
- Bake the tart for 20-25 minutes, or until the crust is golden brown and the filling is set.
- Garnish with chopped fresh parsley and serve hot.
