Mama Lil's Pickled Pepper and Cheddar Stuffed Chicken Breasts
Juicy chicken breasts are stuffed with a combination of cheddar cheese and spicy Mama Lil's Pickled Peppers, then baked to perfection in this tasty dish.
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup cheddar cheese, shredded
- 1/2 cup Mama Lil's Pickled Peppers, chopped
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1/4 cup all-purpose flour
- 2 tablespoons butter
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- Fresh parsley, chopped (for garnish)
Instructions:
- Preheat oven to 375°F.
- In a bowl, mix together the cheddar cheese, Mama Lil's Pickled Peppers, garlic powder, salt, and pepper.
- Use a sharp knife to carefully cut a pocket into each chicken breast, making sure not to cut all the way through.
- Stuff each chicken breast with the cheese and pepper mixture, and secure with toothpicks or kitchen twine.
- Season the chicken breasts with salt and pepper, then dredge them in flour.
- Heat the butter in a large oven-safe skillet over medium-high heat.
- Add the chicken breasts to the skillet and cook for 2-3 minutes on each side, until golden brown.
- Add chicken broth and heavy cream to the skillet, and bring to a boil.
- Transfer the skillet to the preheated oven, and bake for 20-25 minutes, or until the chicken is cooked through.
- Garnish with chopped parsley and serve hot.
