Mama Lil's Pickled Pepper and Chicken Skewers

These juicy and flavorful chicken skewers are marinated in a spicy mixture of Mama Lil's Pickled Peppers, garlic, and herbs, making them a great addition to any weeknight meal. 

Ingredients: 

  • 1 lb. boneless, skinless chicken breasts, cut into 1-inch cubes 
  • 1/4 cup olive oil 
  • 1/4 cup Mama Lil's Pickled Peppers, chopped 
  • 2 cloves garlic, minced 
  • 1 tsp. dried oregano 
  • 1 tsp. dried thyme 
  • Salt and pepper to taste 
  • Skewers, soaked in water for 30 minutes 

Instructions: 

  1. In a large bowl, whisk together the olive oil, Mama Lil's Pickled Peppers, garlic, oregano, thyme, salt, and pepper. 
  2. Add the chicken cubes to the bowl and toss to coat them in the marinade. 
  3. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours. 
  4. Preheat a grill or grill pan over high heat. 
  5. Thread the marinated chicken cubes onto the skewers, leaving a small space between each piece. 
  6. Grill the skewers for 6-8 minutes per side, or until the chicken is cooked through and lightly charred. 
  7. Remove the skewers from the grill and let them cool for a few minutes before serving.
