Mama Lil's Pickled Pepper and Chicken Skewers
These juicy and flavorful chicken skewers are marinated in a spicy mixture of Mama Lil's Pickled Peppers, garlic, and herbs, making them a great addition to any weeknight meal.
Ingredients:
- 1 lb. boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/4 cup olive oil
- 1/4 cup Mama Lil's Pickled Peppers, chopped
- 2 cloves garlic, minced
- 1 tsp. dried oregano
- 1 tsp. dried thyme
- Salt and pepper to taste
- Skewers, soaked in water for 30 minutes
Instructions:
- In a large bowl, whisk together the olive oil, Mama Lil's Pickled Peppers, garlic, oregano, thyme, salt, and pepper.
- Add the chicken cubes to the bowl and toss to coat them in the marinade.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours.
- Preheat a grill or grill pan over high heat.
- Thread the marinated chicken cubes onto the skewers, leaving a small space between each piece.
- Grill the skewers for 6-8 minutes per side, or until the chicken is cooked through and lightly charred.
- Remove the skewers from the grill and let them cool for a few minutes before serving.
