Mama Lil's Pickled Pepper and Goat Cheese Stuffed Chicken Breast
This recipe is a delicious and elegant way to dress up a chicken dinner. The tangy pickled peppers and creamy goat cheese perfectly balance the juicy chicken.
Ingredients:
- 4 boneless, skinless chicken breasts
- 1/2 cup Mama Lil's Pickled Peppers, finely chopped
- 4 ounces goat cheese, crumbled
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Toothpicks
- Fresh parsley, chopped (for garnish)
Instructions:
- Preheat the oven to 375°F.
- In a small bowl, mix together the chopped Mama Lil's Pickled Peppers, crumbled goat cheese, minced garlic, olive oil, salt, and pepper.
- Using a sharp knife, cut a pocket into the thickest part of each chicken breast, being careful not to cut all the way through.
- Stuff each chicken breast with a few spoonfuls of the pickled pepper and goat cheese mixture. Secure the opening with toothpicks.
- Heat a large oven-safe skillet over medium-high heat. Add the stuffed chicken breasts to the skillet and cook for 3-4 minutes on each side, or until they are golden brown.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and no longer pink in the center.
- Remove the skillet from the oven and let the chicken rest for a few minutes before serving. Garnish with fresh parsley and serve hot.
