Mama Lil's Pickled Pepper and Goat Cheese Stuffed Cremini Mushrooms
These stuffed mushrooms are a flavorful and easy appetizer. The tangy pickled peppers and creamy goat cheese are a perfect match.
Ingredients:
- 12 cremini mushrooms, stems removed
- 1/4 cup Mama Lil's pickled peppers, diced
- 4 ounces goat cheese
- 2 tablespoons chopped fresh chives
- Salt and pepper to taste
- Mama Lil's pepper oil (or olive oil) for drizzling
Instructions:
- Preheat the oven to 375°F.
- Place the mushrooms on a baking sheet.
- In a mixing bowl, combine the diced pickled peppers, goat cheese, chopped chives, salt, and pepper.
- Spoon the filling into each mushroom cap, filling it to the top.
- Drizzle a little bit of olive oil over each stuffed mushroom.
- Bake for 15-20 minutes, until the mushrooms are tender and the filling is golden brown.
- Serve immediately.
