Mama Lil's Pickled Pepper and Goat Cheese Stuffed Mushrooms
These stuffed mushrooms are filled with a creamy mixture of tangy goat cheese and spicy Mama Lil's Pickled Peppers, and baked to perfection.
Ingredients:
- 16 large mushrooms, cleaned and stems removed
- 4 ounces goat cheese
- 1/4 cup Mama Lil's Pickled Peppers, chopped
- 1/4 cup breadcrumbs
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Preheat the oven to 375°F.
- In a small bowl, mix together the goat cheese, Mama Lil's Pickled Peppers, breadcrumbs, salt, and pepper.
- Spoon the goat cheese mixture into the mushroom caps, filling them completely.
- Place the stuffed mushrooms on a baking sheet lined with parchment paper.
- Drizzle the mushrooms with olive oil.
- Bake the mushrooms for 20-25 minutes, or until the filling is golden brown and the mushrooms are cooked through.
- Garnish with chopped parsley before serving.
