Mama Lil's Pickled Pepper and Goat Cheese Stuffed Portobello Mushrooms
These Mama Lil's Pickled Pepper and Goat Cheese Stuffed Portobello Mushrooms are a delicious vegetarian dinner option. Meaty portobello mushrooms are stuffed with a mixture of creamy goat cheese, tangy Mama Lil's Pickled Peppers, and crunchy breadcrumbs, then baked until golden brown.
Ingredients:
- 4 large portobello mushrooms
- 4 oz soft goat cheese
- 1/4 cup Mama Lil's Pickled Peppers, chopped
- 1/4 cup panko breadcrumbs
- 2 tbsp grated parmesan cheese
- 1 tbsp minced fresh garlic (optional)
- 1 tbsp olive oil
- Salt and pepper
Instructions:
- Preheat the oven to 375°F.
- Remove the stems from the portobello mushrooms and use a spoon to scrape out the gills. Place the mushrooms on a baking sheet lined with parchment paper.
