Mama Lil's Pickled Pepper and Goat Cheese Stuffed Portobello Mushrooms

These Mama Lil's Pickled Pepper and Goat Cheese Stuffed Portobello Mushrooms are a delicious vegetarian dinner option. Meaty portobello mushrooms are stuffed with a mixture of creamy goat cheese, tangy Mama Lil's Pickled Peppers, and crunchy breadcrumbs, then baked until golden brown. 

Ingredients: 

  • 4 large portobello mushrooms 
  • 4 oz soft goat cheese 
  • 1/4 cup Mama Lil's Pickled Peppers, chopped 
  • 1/4 cup panko breadcrumbs 
  • 2 tbsp grated parmesan cheese 
  • 1 tbsp minced fresh garlic (optional)
  • 1 tbsp olive oil 
  • Salt and pepper 

Instructions: 

  1. Preheat the oven to 375°F. 
  2. Remove the stems from the portobello mushrooms and use a spoon to scrape out the gills. Place the mushrooms on a baking sheet lined with parchment paper. 
  3. In a small bowl, mix together the goat cheese, Mama Lil's Pickled Peppers, breadcrumbs, and parmesan cheese. 
  4. Spoon the mixture evenly into the mushroom caps. 
  5. Drizzle the mushrooms with olive oil and season them with salt and pepper. 
  6. Bake for 15-20 minutes or until the mushrooms are tender and the filling is golden brown. Serve hot.
