Mama Lil's Pickled Pepper and Olive Tapenade
This tapenade is a delicious appetizer that's perfect for entertaining. The combination of pickled peppers and olives is a flavor explosion.
Ingredients:
- 1 cup Kalamata olives, pitted
- 1/4 cup Mama Lil's pickled peppers, diced
- 2 tablespoons capers
- 2 tablespoons chopped fresh parsley
- 2 tablespoons olive oil
- 1 garlic clove, minced
- Salt and pepper to taste
Instructions:
- In a food processor, pulse the Kalamata olives, diced pickled peppers, capers, chopped parsley, olive oil, minced garlic, salt, and pepper until finely chopped but still chunky.
- Spoon the tapenade into a serving dish.
- Serve with toasted baguette slices, crostini or crackers.
