Mama Lil's Pickled Pepper and Prosciutto Rolls
These rolls are a tasty and elegant appetizer. The saltiness of the prosciutto is balanced by the tangy pickled peppers.
Ingredients:
- 4 slices prosciutto
- 1/4 cup Mama Lil's pickled peppers, diced
- 1/4 cup ricotta cheese (or softened chevré or cream cheese
- 1 tablespoon chopped fresh parsley
- Salt and pepper to taste
Instructions:
- In a mixing bowl, combine the ricotta cheese, chopped parsley, salt, and pepper.
- Lay a slice of prosciutto on a cutting board.
- Spread a thin layer of the ricotta cheese mixture over the prosciutto.
- Sprinkle the diced pickled peppers over the top of the ricotta cheese.
- Roll up the prosciutto and secure with toothpicks.
- Repeat with the remaining slices of prosciutto and filling.
- Chill the prosciutto rolls in the refrigerator for at least 30 minutes.
- Slice the rolls into rounds and serve.
