Mama Lil's Pickled Pepper and Prosciutto Rolls

These rolls are a tasty and elegant appetizer. The saltiness of the prosciutto is balanced by the tangy pickled peppers. 


  • 4 slices prosciutto 
  • 1/4 cup Mama Lil's pickled peppers, diced 
  • 1/4 cup ricotta cheese (or softened chevré or cream cheese
  • 1 tablespoon chopped fresh parsley 
  • Salt and pepper to taste 


  1. In a mixing bowl, combine the ricotta cheese, chopped parsley, salt, and pepper. 
  2. Lay a slice of prosciutto on a cutting board. 
  3. Spread a thin layer of the ricotta cheese mixture over the prosciutto. 
  4. Sprinkle the diced pickled peppers over the top of the ricotta cheese. 
  5. Roll up the prosciutto and secure with toothpicks. 
  6. Repeat with the remaining slices of prosciutto and filling. 
  7. Chill the prosciutto rolls in the refrigerator for at least 30 minutes. 
  8. Slice the rolls into rounds and serve.
