Mama Lil's Pickled Pepper and Ricotta Stuffed Shells
These stuffed shells are a delicious and comforting dinner that's perfect for a cozy night in. The tangy pickled peppers add a unique twist to the classic ricotta filling.
Ingredients:
- 16 jumbo pasta shells
- 1 cup ricotta cheese
- 1/2 cup Mama Lil's Pickled Peppers, finely chopped
- 1/4 cup grated Parmesan cheese
- 1 egg, beaten
- 1 clove garlic, minced
- Salt and black pepper to taste
- 2 cups marinara sauce
- Fresh basil leaves, chopped (for garnish)
Instructions:
- Preheat the oven to 375°F.
- Cook the jumbo pasta shells according to the package directions. Drain the cooked shells and set them aside to cool.
- In a medium bowl, mix together the ricotta cheese, chopped Mama Lil's Pickled Peppers, grated Parmesan cheese, beaten egg, minced garlic, salt, and black pepper.
- Spoon the ricotta filling into each cooked pasta shell and place the stuffed shells in a large baking dish.
- Pour the marinara sauce over the stuffed shells, covering them completely. 6. Cover the baking dish with foil and bake for 25-30 minutes, or until the shells are heated through and the cheese is melted.
- Garnish the stuffed shells with chopped fresh basil leaves and serve hot.
