Mama Lil's Pickled Pepper and Roasted Garlic Hummus
This hummus is a flavorful dip that's perfect for snacking or entertaining. The pickled peppers add a tangy kick, while the roasted garlic adds depth and richness.
Ingredients:
- 1 can chickpeas, drained and rinsed
- 1 head garlic
- 1/4 cup Mama Lil's pickled peppers, diced
- 2 tablespoons tahini
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
- Preheat the oven to 400°F.
- Cut off the top of the garlic head to expose the cloves.
- Drizzle the garlic head with olive oil and wrap it in aluminum foil.
- Roast the garlic in the oven for 30-40 minutes, until the cloves are soft and golden brown.
- In a food processor, combine the chickpeas, diced pickled peppers, tahini, lemon juice, olive oil, salt, and pepper.
- Squeeze the roasted garlic cloves out of the head and add them to the food processor.
- Blend everything together until smooth and creamy.
- Drizzle Mama Lil's oil on top
- Serve with pita chips or fresh vegetables.
