Mama Lil's Pickled Pepper and Shrimp Scampi
This easy and flavorful shrimp scampi is packed with tangy Mama Lil's Pickled Peppers, garlic, lemon, and butter, making for a delicious and comforting dinner.
Ingredients:
- 1 lb. spaghetti
- 4 tbsp. butter
- 4 cloves garlic, minced
- 1/4 cup Mama Lil's Pickled Peppers, sliced
- 1 lb. large shrimp, peeled and deveined
- 1/4 cup white wine
- Juice of 1 lemon
- Salt and pepper to taste
- Chopped fresh parsley
Instructions:
- Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package directions until al dente. Drain the spaghetti and set aside.
- While the spaghetti cooks, heat the butter in a large skillet over medium heat.
- Add the garlic and Mama Lil's Pickled Peppers to the skillet and sauté for 2-3 minutes, or until the garlic is fragrant and the peppers are softened.
- Add the shrimp to the skillet and sauté for 2-3 minutes per side, or until the shrimp are pink and cooked through.
- Pour in the white wine and lemon juice, and season with salt and pepper to taste. Cook for an additional 2-3 minutes, or until the sauce has thickened slightly.
- Add the cooked spaghetti to the skillet and toss to coat it in the sauce.
- Divide the spaghetti and shrimp among 4 plates, and garnish with chopped parsley.
