Mama Lil's Pickled Pepper and Steak Fajitas

These fajitas are a tasty and easy dinner that comes together in just 30 minutes. The pickled peppers add a tangy flavor that pairs perfectly with the sizzling steak and vegetables. 

Ingredients: 

  • 1 pound flank steak, sliced against the grain 
  • 1 red bell pepper, sliced 
  • 1 green bell pepper, sliced 
  • 1/2 red onion, sliced 
  • 1/2 cup Mama Lil's Pickled Peppers, sliced 
  • 1 tablespoon olive oil 
  • 2 teaspoons chili powder 
  • 1 teaspoon ground cumin 
  • Salt and black pepper to taste 
  • Flour or corn tortillas 
  • Sour cream, shredded cheese, and chopped cilantro (for serving) 

Instructions: 

  1. Heat a large skillet over high heat. Add the sliced flank steak and cook for 2-3 minutes, or until browned. Remove the steak from the skillet and set it aside. 
  2. Add the sliced red and green bell peppers, sliced red onion, and sliced Mama Lil's Pickled Peppers to the skillet. Drizzle with olive oil and sprinkle with chili powder, ground cumin, salt, and black pepper. Toss to coat the vegetables in the spices and oil. 
  3. Cook the vegetables over high heat, stirring occasionally, for 5-7 minutes, or until they are softened and lightly charred. 
  4. Add the cooked flank steak back to the skillet and toss to combine with the vegetables. 
  5. Serve the steak and vegetable mixture in warm tortillas, topped with sour cream, shredded cheese, and chopped cilantro.
