Mama Lil's Pickled Pepper Steak Tacos
These flavorful steak tacos are packed with tangy Mama Lil's Pickled Peppers, fresh vegetables, and tender, juicy steak. They're a quick and easy dinner that's perfect for a busy weeknight.
Ingredients:
- 1 lb. flank steak
- 2 tbsp. olive oil
- 1/4 cup Mama Lil's Pickled Peppers, chopped
- 1/2 red onion, sliced
- 1 red bell pepper, sliced
- 1 avocado, sliced
- 1/4 cup chopped fresh cilantro
- 8 corn tortillas
- Salt and pepper to taste
Instructions:
- Preheat a grill or grill pan over high heat.
- Rub the flank steak with the olive oil and season with salt and pepper to taste.
- Grill the steak for 4-5 minutes per side for medium-rare, or until cooked to your desired doneness.
- Remove the steak from the grill and let it rest for 5 minutes.
- While the steak rests, heat a skillet over medium-high heat.
- Add the chopped Mama Lil's Pickled Peppers, sliced red onion, and red bell pepper to the skillet and cook for 3-4 minutes, or until the vegetables are softened and lightly charred.
- Warm the tortillas in the microwave or in a dry skillet over medium-high heat.
- Slice the rested steak into thin strips.
- To assemble the tacos, place a few slices of steak on each tortilla, followed by the sautéed vegetables, sliced avocado, and chopped fresh cilantro.
- Serve hot and enjoy!
