Mama Lil's Pickled Pepper and Sun-Dried Tomato Crostini
These crostini are a great appetizer for any occasion. The combination of pickled peppers and sun-dried tomatoes is a flavor explosion.
Ingredients:
- 1 baguette, sliced into 1/4-inch rounds
- 1/4 cup olive oil
- 4-6 ounces goat cheese
- 1/4 cup Mama Lil's pickled peppers, diced
- 1/4 cup chopped sun-dried tomatoes
- 2 tablespoons chopped fresh basil
- Salt and pepper
Instructions:
- Preheat the oven to 400°F.
- Place the baguette slices on a baking sheet.
- Brush each slice with olive oil.
- Bake for 10-12 minutes, until the bread is lightly toasted.
- In a mixing bowl, combine the goat cheese, diced pickled peppers, chopped sun-dried tomatoes, chopped basil, salt, and pepper.
- Spread the goat cheese mixture onto each baguette slice.
- Place the crostini on a serving platter and serve.
