Mama Lil's Pickled Pepper and Sweet Potato Hash

This sweet and spicy hash is a delicious breakfast or brunch dish that's easy to make and packed with flavor. 

Ingredients: 

  • 2 medium sweet potatoes, peeled and diced 
  • 1/2 cup Mama Lil's Pickled Peppers, sliced 
  • 1/2 red onion, diced 
  • 2 cloves garlic, minced 
  • 2 tablespoons olive oil 
  • 1 teaspoon smoked paprika 
  • Salt and black pepper to taste 
  • 4 large eggs 
  • Fresh parsley, chopped (for garnish) 

Instructions: 

  1. Heat a large skillet over medium heat. Add the diced sweet potatoes, sliced Mama Lil's Pickled Peppers, diced red onion, minced garlic, olive oil, smoked paprika, salt, and black pepper. Stir to combine. 
  1. Cook the sweet potato mixture, stirring occasionally, for 15-20 minutes, or until the sweet potatoes are tender and lightly browned. 
  1. Make 4 wells in the sweet potato mixture with the back of a spoon. Crack an egg into each well. 
  1. Cover the skillet with a lid and cook for 3-4 minutes, or until the eggs are cooked to your liking. 
  1. Garnish the sweet potato hash with chopped fresh parsley and serve hot.
