Mama Lil's Spicy Vegan Pickled Pepper Tacos

These vegan tacos are filled with sautéed vegetables and spicy Mama Lil's Pickled Peppers. The perfect dish for a quick and flavorful weeknight dinner.  

Ingredients: 

  • 8 small corn tortillas 
  • 1 cup sliced bell peppers 
  • 1 cup sliced onions 
  • 1/3 cup sliced Mama Lil's Pickled Peppers 
  • 1/3 cup black beans
  • 1 tbsp olive oil 
  • Salt and pepper to taste 
  • Fine's Sriracha Hot Sauce, for serving  

Instructions: 

  1. Heat the olive oil in a skillet over medium heat. 
  2. Add the bell peppers and onions and sauté for 5-7 minutes or until the vegetables are tender. 
  3. Add the Mama Lil's Pickled Peppers to the skillet and stir to combine. 
  4.  Warm black beans in microwave or in small pot
  5. Warm the corn tortillas in the microwave or on a griddle. 
  6.  Top each tortilla with 1 spoonful of black beans 
  7. Divide the sautéed vegetables evenly between the tortillas. 
  8. Serve with Fine's Sriracha Hot Sauce on the side.
