Mama Lil's Spicy Vegan Pickled Pepper Tacos
These vegan tacos are filled with sautéed vegetables and spicy Mama Lil's Pickled Peppers. The perfect dish for a quick and flavorful weeknight dinner.
Ingredients:
- 8 small corn tortillas
- 1 cup sliced bell peppers
- 1 cup sliced onions
- 1/3 cup sliced Mama Lil's Pickled Peppers
- 1/3 cup black beans
- 1 tbsp olive oil
- Salt and pepper to taste
- Fine's Sriracha Hot Sauce, for serving
Instructions:
- Heat the olive oil in a skillet over medium heat.
- Add the bell peppers and onions and sauté for 5-7 minutes or until the vegetables are tender.
- Add the Mama Lil's Pickled Peppers to the skillet and stir to combine.
- Warm black beans in microwave or in small pot
- Warm the corn tortillas in the microwave or on a griddle.
- Top each tortilla with 1 spoonful of black beans
- Divide the sautéed vegetables evenly between the tortillas.
- Serve with Fine's Sriracha Hot Sauce on the side.
