Mama Lil's Pickled Peppers

Mama Lil's Pickled Pepper and Chicken Alfredo 

This delicious and easy-to-make pasta dish is perfect for a quick and satisfying dinner. The creamy Alfredo sauce is made even more flavorful with the addition of Mama Lil's Pickled Peppers. 

Ingredients: 

  • 1 lb. linguine 
  • 2 tbsp. olive oil 
  • 1 lb. boneless, skinless chicken breasts, cut into bite-sized pieces 
  • 1/4 cup unsalted butter 
  • 2 cloves garlic, minced 
  • 1 cup heavy cream 
  • 1/2 cup freshly grated Parmesan cheese 
  • 1/4 cup Mama Lil's Pickled Peppers, chopped 
  • Salt and pepper to taste 

Instructions: 

  1. Cook the linguine according to package instructions. 
  2. While the pasta cooks, heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown and cooked through, about 5-7 minutes. 
  3. Remove the chicken from the skillet and set aside. 
  4. In the same skillet, melt the butter over medium heat. Add the garlic and cook for 1-2 minutes. 
  5. Add the heavy cream and Parmesan cheese, whisking until the cheese is melted and the sauce is smooth. 
  6. Add the chopped Mama Lil's Pickled Peppers to the sauce and stir to combine. 
  7. Return the chicken to the skillet and stir to coat with the sauce. 
  8. Drain the pasta and add it to the skillet, tossing to coat with the sauce. 
  9. Season with salt and pepper to taste and serve. 

 

Grilled Cheese with Mama Lil's Pickled Peppers and Tomato Soup 

This classic comfort food combination gets a spicy twist with the addition of Mama Lil's Pickled Peppers. The tangy, slightly sweet peppers add a new dimension to the classic grilled cheese and tomato soup pairing. 

*Start with your favorite pre-made tomato soup or try this quick fresh recipe.

Ingredients: 

Grilled cheese:

  • 8 slices bread 
  • 4 tbsp. unsalted butter, softened 
  • 8 oz. cheddar cheese, grated 
  • 1/4 cup Mama Lil's Pickled Peppers, sliced 
  • 2 tbsp. mayonnaise 
  • Salt and pepper to taste 
Tomato soup: 
  • 2 tbsp. olive oil 
  • 1 onion, chopped 
  • 2 cloves garlic, minced 
  • 1 can (28 oz.) whole peeled tomatoes 
  • 1 cup chicken or vegetable broth 
  • 1/2 cup heavy cream 
  • Salt and pepper to taste 

      Instructions: 

      Grilled Cheese:

      1. Preheat a griddle or large skillet over medium heat. 
      2. Spread the softened butter on one side of each slice of bread. 
      3. Place four slices of bread, buttered side down, on the griddle or skillet. 
      4. Top each slice of bread with 1/4 of the grated cheddar cheese and 1 tbsp. of Mama Lil's Pickled Peppers. 
      5. Place the remaining slices of bread on top of the cheese and peppers, buttered side up. 
      6. Cook the sandwiches until the bread is golden brown and the cheese is melted, about 3-4 minutes per side. 
      7. While the sandwiches are cooking, make the tomato soup. 

      Tomato soup:

      1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. 
      2. Add the whole peeled tomatoes, chicken or vegetable broth, and salt and pepper to taste. 
      3. Bring the soup to a simmer and cook for 10-15 minutes, until the tomatoes have broken down and the flavors have melded together. 11. Using an immersion blender or transfer the soup to a blender, blend the soup until smooth. 
      4. Stir in the heavy cream and season with salt and pepper to taste. 
      5. Serve the grilled cheese sandwiches with the tomato soup on the side. 

       

      Mama Lil's Pickled Pepper and Sausage Pizza 


      This flavorful pizza is a great way to use Mama Lil's Pickled Peppers. The pickled peppers add a spicy kick to the savory sausage and gooey cheese, making for a delicious and easy dinner. 

      Ingredients: 

      • 1 lb. pizza dough 
      • 1/2 cup tomato sauce 
      • 1/4 cup Mama Lil's Pickled Peppers, sliced 
      • 1/2 lb. Italian sausage, cooked and crumbled 
      • 2 cups shredded mozzarella cheese 
      • 1/4 cup chopped fresh basil 

      Instructions: 

      1. Preheat the oven to 450°F. 
      2. On a lightly floured surface, roll out the pizza dough to your desired thickness and shape. 
      3. Transfer the pizza dough to a lightly greased pizza pan or baking sheet. 
      4. Spread the tomato sauce over the pizza dough, leaving a 1/2-inch border around the edges. 
      5. Sprinkle the Mama Lil's Pickled Peppers and cooked sausage over the tomato sauce. 
      6. Top the pizza with the shredded mozzarella cheese. 
      7. Bake the pizza for 12-15 minutes, or until the cheese is melted and bubbly and the crust is golden brown.

      Mama Lil's Pickled Pepper and Steak Tacos 

      These flavorful steak tacos are packed with tangy Mama Lil's Pickled Peppers, fresh vegetables, and tender, juicy steak. They're a quick and easy dinner that's perfect for a busy weeknight. 

      Ingredients: 

      • 1 lb. flank steak 
      • 2 tbsp. olive oil 
      • 1/4 cup Mama Lil's Pickled Peppers, chopped 
      • 1/2 red onion, sliced 
      • 1 red bell pepper, sliced 
      • 1 avocado, sliced 
      • 1/4 cup chopped fresh cilantro 
      • 8 corn tortillas 
      • Salt and pepper to taste 

      Instructions: 

      1. Preheat a grill or grill pan over high heat. 
      2. Rub the flank steak with the olive oil and season with salt and pepper to taste. 
      3. Grill the steak for 4-5 minutes per side for medium-rare, or until cooked to your desired doneness. 
      4. Remove the steak from the grill and let it rest for 5 minutes. 
      5. While the steak rests, heat a skillet over medium-high heat. 
      6. Add the chopped Mama Lil's Pickled Peppers, sliced red onion, and red bell pepper to the skillet and cook for 3-4 minutes, or until the vegetables are softened and lightly charred. 
      7. Warm the tortillas in the microwave or in a dry skillet over medium-high heat.

      9. To assemble the tacos, place a few slices of steak on each tortilla, followed by the sautéed vegetables, sliced avocado, and chopped fresh cilantro.

      Mama Lil's Pickled Pepper and Chicken Skewers

      Ingredients: 

      • 16 jumbo pasta shells 
      • 1 cup ricotta cheese 
      • 1/2 cup Mama Lil's Pickled Peppers, finely chopped 
      • 1/4 cup grated Parmesan cheese 
      • 1 egg, beaten 
      • 1 clove garlic, minced 
      • Salt and black pepper to taste

      Instructions:

      • 1/4 cup white wine 
      • Juice of 1 lemon

      Instructions: 

      1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package directions until al dente. Drain the spaghetti and set aside.

            • 1 yellow bell pepper, sliced

            1. Preheat the oven to 425°F.
