Mama Lil's Pickled Pepper and Chickpea Salad

This healthy and flavorful salad is packed with protein and fiber from the chickpeas and plenty of tangy pickled peppers. It's a great option for a quick and easy lunch. 

Ingredients: 

• 2 cans chickpeas, drained and rinsed 
• 1/2 cup Mama Lil's Pickled Peppers, sliced 
• 1/4 cup chopped fresh parsley 
• 2 tablespoons olive oil 
• 2 tablespoons red wine vinegar 
• Salt and black pepper to taste 

Instructions: 1 

1. In a large bowl, combine the chickpeas, sliced Mama Lil's Pickled Peppers, and chopped fresh parsley. 2. In a small bowl, whisk together the olive oil, red wine vinegar, salt, and black pepper. 
2. Pour the dressing over the chickpea mixture and stir to combine. 
3. Chill the salad for at least 30 minutes before serving. 
4. Serve the chickpea salad cold as a side dish or a light lunch.
